INGREDIENTS

  • 1 (5 1/2 pound) corned beef brisket with spice packet
  • 7 small potatoes, peeled and diced
  • 4 carrots, peeled and diced
  • 3 cloves garlic, chopped
  • 1 medium onion, diced

DIRECTIONS

  1. Preheat the oven to 300 degrees F (150 degrees C).
  2. Place the brisket in the center of a roasting pan. Arrange the potatoes and carrots around the sides. Place the onion and garlic on top of the roast, and season with salt and pepper. Empty the seasoning packet over the roast, and pour enough water into the pan to almost cover the potatoes. Cover with a lid or heavy aluminum foil.
  3. Roast for 5 to 6 hours in the preheated oven, until the roast is so tender it can be flaked apart with a fork.

Awsome recipe but salt shouldn't be used in it, was too salty, otherwise was easy to prepare. Delicious. Thank you.

This was good, great alternative to boiling the corned beef. I'll do this again!

What on earth did I do wrong?? This was EXTREMELY salty. I did everything according to the recipe directions with the exception of just putting a dash, and I do mean a dash of salt yet it was so salty we just couldn't eat it. I was so disappointed. The meat was very tender and juicy and it smelled DELICIOUS as it was cooking though. If I can find a way to make it without it being so salty I would. Maybe corned beef brisket is just salty to begin with...I'm not sure because I've never made it before.
