Very tasty! Will make again for sure. This went to a Christmas dinner today for about 20 people so I used 3 cans of corn, 2 tomatoes, 1 large bell pepper, and 1 medium onion. I didn't have any cayenne pepper so I used some chili powder and stepped it up a notch with some Tabasco. Next time I make this I'm going to use canned tomatoes. I didn't care for the way the tomato skins peeled back into little round things. Just didn't look good in the dish. I also will go with frozen corn for a fresher flavor I think. That being said, the dish went over great and there was hardly any left in the dish.

This is a simple and tasty side dish. My family likes corn and was wondering how different this could possibly be. Let me say right now, that this is unlike any other corn recipe we have ever had. Its warm, flavorful and has a great kick to it - almost like an after booster.. excellent.

This was a nice way to change up corn. I did decrease the amount of salt to 1/2 t. and added 1/8 tsp. cayenne, which just the right amount of heat for us. Great way to use up summer veggies.

My fiance begs for this dish! I do not add the tomatoes, and I use green and red peppers (tastes great, and a great color!). I also use 3/4 of a chili pepper; great bite!

I followed the recipe exactly, but it turned out way too salty. I had to throw it away. If I make it again, I will decrease the salt to either 1/2 or 1/4 tsp. I will also add chopped jalapeno peppers.

I bought this to a potluck as a side dish and everyone loved it. I made a lot of changes though: I used Anaheim peppers for the green peppers. I also used canned whole peeled tomatoes instead of the fresh ones. I didn't have cayenne pepper so I put in some paprika and red chili powder instead. I used half the amount of salt. It made an excellent side dish. Also great to serve with chips.

A very tasty solution to my bordeom with reheating frozen corn. I didn't use the green pepper, but the onion, tomato and spices still added a great flavor. It definitely has kick to it!
