Very good! We all enjoyed it! I used Turkey bacon peices, 1 zucchini, corn, 1/2 onion and a small yellow peper. Very good! Did not add any cheese! The flavors are incredible!

I loved this recipe. I added kosher salt, pepper and creole seasoning. It was a hit with my family. It's a great way to eat vegetables.

This was simply awesome. The fresh corn really gave the dish a great flavor along with the bacon. Go to veggie side dish now.

A friend gave me a bag of zucchini and decided to try different recipes on this site and this is one of them that I choose. And....so glad I did! Only change I made was to use a mexican blend cheeses because I did not have M/J on hand. Personally, we felt that the bacon made this recipe. Thanks, Molson7, for submitting such an easy and tasty side dish!!

I thought this was a nice change of pace from our roasted or sauteed zucchini. The flavors and textures were comforting and paired well with the flank steak I made. I added about 1/4 t salt as well as the pepper, and I'm glad I did. I didn't have any fresh corn so I used a can of shoepeg corn. Next time I make this I will use less corn, maybe by half.
