'This colorful salsa is worth the extra time it takes to grill the ears of corn,' assures field editor Nancy Horsburgh of Everett, Ontario. 'The flavor goes well with barbecued meats, but it's also tasty served with chips.'

Salsa De Tomatillo

This is the 'salsa de tomatillo' that I grew up with. It can be used as a sauce for grilled chicken, fish or shrimp, as the basis for green chilaquiles (pour over tortilla chips, shredded cooked chicken and shredded Monterey Jack, then heat under the broiler), and as a dipping sauce for chips. Delicioso!

Avocados and fresh corn from the cob cohabitate with red pepper flakes, red wine, spices, herbs, and vinegar in this sassy salsa. Try it as a side dish with grilled chicken, or eat it plain with tortilla chips.
