This recipe was perfect! I needed a cool shrimp salad to take to the pool for dinner. It was easy to make, used readily available ingredients, and tasted delicious. It made just the right amount for two people. I plan to double or triple it and take it as a side to our fourth of July picnic. I had to substitute roasted red peppers (that's what was in our pantry) and frozen corn and shrimp, and it still turned out great. Thanks for a delicious recipe!
