Corn Potato Pancakes

INGREDIENTS
2 cups mashed potatoes (prepared with milk and butter)
1/4 cup all-purpose flour
1/4 cup cream-style corn
1 egg, beaten
3 tablespoons finely chopped onion
1 teaspoon minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon minced garlic
1/8 teaspoon pepper
3 tablespoons vegetable oil, divided

DIRECTIONS
In a large bowl, combine the first nine ingredients. In a large skillet, heat 1 tablespoon oil; drop four 1/4 cupfuls of batter into skillet. Cook for 1-2 minutes on each side or until golden brown. Repeat with remaining oil and batter.

Excellent! My husband and I found this very tasty. As most cooks, I altered slightly. Grated the onion, added some shredded cheese. I fried my mixture in vegetable and olive oil. Enjoy

These are the bomb. I have made so many times. I adjust seasonings to my liking and heat up my electric skillet to a medium low tempature. I form the potato mixture into a big hamburger like patty- I put a dollop of butter with the oil and slow cook for like 10 minutes or so per side to get them nice and browned and nice and crispy. Before I flip them over I add on more pats of butter to the top. YUMMY!!! It's a meal within itself and are great reheated as well. I have even added in some shredded cheese for a cheesy corn potato pancake and that is still sitting on my hips..LOL!

Outrageously delicious Carolyn!! When my daugher came home and saw me making these her mouth was literally watering. I made a ton and the kids inhaled them! I added more seasonings to the mix and a goodly amount of parm cheese. Huge hit my dear and thank you so much!!

These are just plain delecious! A good old fashioned taste of home cooking. I bet the Navy guys I cooked for would have loved these, I have a bunch of friends that cook and we share recipes, this one will be sure to be spread around!

These were too runny and soft inside. Crispy outside, liquid potato inside. I had twice the potato stated, so I doubled the recipe. I guess you could say the texture put you off of them, and they needed more ingredients inside to hold their shape and add texture and flavour. Really quite flavourless. You could easily add chopped vegetables (frozen) or ham, because these need something inside for crunch and texture. Overall, a new idea and one I might try again with left over potato mash, while adding some meat and vegetables and flavourings.

The first time I made these was after a cooking mishap. I made the worst batch of mashed potatoes ever - they were runny, and the big bowl of potatoes went virtually untouched. I used the ample leftovers using this recipe (adding extra cornstarch and regular instead of cream style corn to compensate for the runniness). No one could get enough of them! My husband now requests these regularly. Thank you for contributing this recipe!!!

These were ok, I used regular corn but added some sour cream (bout 1/2 c). I ended up adding extra flour, cause the "batter" didn't seem thick enough. The taste was good, but this was my first attempt at potato pancakes and I couldn't quite figure out the right temp to fry them, played with the amount of oil etc. I may try again.
