Vegetable Nuggets

Ham and Corn Beignets

Use more fresh corn if the ears are small. Canned white corn, drained, may be used as a substitute for fresh corn. When placing the beignet batter into the oil, a 1 or 2 ounce ice cream scoop may be helpful!

Corn Tortilla Chips

Here's a simple recipe for making corn tortilla chips spiced only with salt. The chips may alternately be prepared by baking the tortilla wedges in a 350 degrees F (175 degrees C) oven for 5 minutes, or until crisp.

Light and fluffy with lots of zucchini and fresh corn, these yummy fritters are a family favorite. Serve hot with ranch dressing.

Cheesy Corn Casserole

Whole kernel and cream-style corn are combined with sour cream, egg, corn bread mix, onion and cheddar cheese. The casserole is baked and then topped with even more cheese, which makes it even better!

I found this recipe in a cookbook and lightened it up by using skim milk, less oil, egg whites and reduced-fat cheese. It's moist and mildly flavored with canned chilies. --Tena Edyvean of Rapid City, South Dakota
