Here in the south cucumbers and onions in vinegar are queen; but THIS is the bomb!! I don't usually like the standard but this I will eat and have requests for the recipe all the time!! Made it just like you said.

SO EASY,SO TASTY! I am sure it is great with cucumbers, but I make it with equal amounts of frozen corn and peas, no need to cook. Add a little red bell pepper mmm-good. I also use lemon juice instead of vinegar.

Soooo good! I realy recomend white vinegar for this. The flavor is so unexpected and delicious. We couldn't wait for this to sit and marinade. The whole thing was gone right after I threw it together. We now have a new healthy favorite. Thank you!

I had doubts about this, but it was indeed very good. I added some black beans. And definitely use real sugar, if you use a sugar substitute it gives it a strange flavor. So yummy!

This recipe was very simple and delicious! I increased doubled the amount of onion and used 3 extra large cucumbers with the seeds removed (due to my crazy crop this year!) I increased the rest of the ingredients by 1 1/2. The flavors are very simple and blend very well together!

I liked this recipe, but it isn't something I'd make often. I made it for a picnic; I thought the cool flavor would be good with hot wings, which it was! I also used red wine vinegar, and cut that down quite a bit (to about 2 tbsp...I only like a little vinegar flavor).

We really liked this cool salad....nice and refreshing...I actually used leftover corn on the cob which I shucked off the kernels. I also used a large English cuke .....I prefer them because they have way less seeds. I did decrease the vinegar slightly, added 1 tblspn. of water and 1 tblspn. of olive oil. Decreased the sugar as well to 1 tsp. Used dried dill...but next time will use fresh. I also used red onion. Very nice. Tasty and light. Thanks!
