This is an awesome, straight forward salad that is nice, light & refreshing. The only change I made was to use a bunch of green onions instead of the white onion because I prefer the flavor. Even some of the kids at my dinner party enjoyed it, so that is a definite plus. Thank you for sharing!!! :)

Good ,I actually used the baby corn pictured . Mine was already marinated and worked well with the recipe. Next time I will try somthing a little different with the marinade recipe to give a little more flavor , maybe not add the water.

This salad was a hit! I was looking for a way to use up some over-purchased cucumbers and had never heard of combining corn and cucumber before. All I had was baby corn, but I think it looks really pretty with red onion and the scored cucumbers. I left the dressing as is, except for adding a little more pepper. Thanks for the recipe - I'll use it again!

This was so tasty! I will definitely make this again. I used one quarter cup of raspberry champagne vinegar instead of one half a cup of plain vinegar. I omitted the water. A great way to use summer vegetables.

I was looking for a corn and cucumber salad because I like the combination, and this recipe is very good. The only thing I would do differently is maybe omit the water and add less vinegar, since I prefer a hint of vinegar rather than a full vinegar flavor. Thanks for the recipe!
