We really liked this! I originally planned to make a corn and zucchini dish with bacon from this site, and realized at the last minute that I didn't have zucchini. I added a little fresh chopped parsley. The basil and bacon go really nicely with the corn and tomato. I'll double the recipe next time. Thanks!

Absolutely love this dish. My kids devoured their veggies with this one. I lightened it up by using Oscar Mayers Turkey Bacon. YUMMO!!

sorry, this one did not work for us.My husband said it tasted like Big Red gum.....not sure how he got that, but I won't be making this again. Granted, I ommitted the onion because the hubby doesn't like them but the combo of corn, tomatoes and basil just didn't work for me.

I followed the recipe quite closely except I substituted the onion with some chopped red peppers (hubby doesn't like onions). I also used fresh basil instead of the dried. It was enjoyed by all at my dinner party.

In fairness, I need to mention that I didn't have bacon on hand, so I used "Real Bacon Bits." This recipe is fine; it's a nice way to prepare corn, different than just opening a can of corn and heating it up. That's what I was looking for--an interesting veggie twist.

This is yummy! I made this for dinner tonight, and I lost count of how many times my husband said, "This is really good." The combination seems a little weird, but it words really well. Even my picky daughter (who doesn't like tomatoes) said she really liked the corn!

My husband made this recipe. He made six times the recipe and he substituted the cut tomatos with 1 lb of "pico de gallo" store bought mix of tomatoes,onions,jalapeno peppers etc. This was the best corn recipe ever. Very flavorful
