I changed a few things when i made this and i thought it was great. I browned some ground beef and mixed it with the corn, creamed corn, and chile peppers. I didnt find this to be dry at all. Even my two year old loved it!

This is quick and easy and very yummy! Everyone always loves it...I've added some jalpenos if you wanna spice it up.

This was an okay cassarole and went well with a mexican-style dinner. Didn't impress me too much as it stays a very unbalanced wet/dry cassarole. If I made it again, I would use my own cornbread recipes instead of boxed.

I actually liked this, and I am not a fan of cornbread at all. Because I'm not, I had to make my own cornbread mix; found a recipe on this site for that. Also didn't have creamed corn, so I had to make that too (used Marian's Cream Corn recipe) and substitued salsa verde for the green chiles. I did find it hard to spread the cornbread mix in the pan, and I don't think I greased the pan enough because it stuck a little to the pan. Bf really liked this and said I should make it again.
