Coq Au Vin Slow Cooker Style

"Love making this dish! It's super easy and looks fancy when it's done. I always seem to have open red wine on hand and making this is a great way to use it up! The chicken soaks up the red wine and bacon flavor and stays tender. Garnish with fresh parsley and a rosemary sprig and enjoy!"

  1. Heat oil in a large skillet over medium-high heat. Working in batches, cook chicken breasts in hot oil until browned on both sides, 4 to 6 minutes per side. Transfer browned chicken to a slow cooker.
  2. Cook bacon in the same skillet, turning occasionally, over medium-heat until evenly browned, about 10 minutes. Transfer bacon to the slow cooker.
  3. Stir red wine, chicken stock, garlic, rosemary, bay leaf, salt, and pepper into the slow cooker.
  4. Cook chicken mixture in the slow cooker set to Low until chicken is tender, 4 to 5 hours.

  • Cook's Note:
  • The best turn out I have found is to put the slow cooker on high and warm all the ingredients while the chicken and bacon are cooking. Turn to low when you put the chicken in. You can also add mushrooms and onions for a one and done meal.

Easy considering what you are making. Great taste

Being a french trained chef and i just cooked the bacon and garlic in the pan then used the bacon grease to cook the chicken in and then deglazed the pan with the wine, put in the croc pot with some lemon slices and rosemary and some tyme and some crushed garlic and turned out great.

My suggestion is to cook the bacon first and then brown the chicken in the bacon grease. Leave about a tablespoon of the grease in the pan and deglaze with the wine scraping up all of the browned goodness. Then poor this into the slow cooker. This will give more flavor.
