Directions

  1. In large bowl toss macaroni, chicken, cucumber, tomatoes, onion, parsley and dressing until evenly coated. Refrigerate at least 30 minutes.

yummy. i used an olive oil vinagerrett (sp?) and it was wonderful. very refreshing.

I omitted the chicken, as I'm baking rosemary chicken to go with. I measured out two dry cups of elbow macaroni which I figured would be closer to servings for four people, as it's usually in half cup servings. I used half a red onion and increased the dressing by another 3/4 c. as the amount required wouldn't be enough once the pasta sits and soaks up some of the dressing. I used half zesty italian and half ranch, as that's what I had on hand. Smells great.

This was quite good. Only thing I did different was instead of canned chicken I used the Tyson frozen already cooked diced chicken breast. Nice light lunch

Good as is but better when: Stuff whole chicken with 2 celery ribs cut in half, springs of fresh thyme, rosemary and 8 sage leaves, seasoned with Riley's seasoning salt (or s&p). Roast bird til done.(2 hrs or so) Cool and bone chicken. I used it all in the salad as my family prefers lots of meat. I boiled carcass and skin for a soup broth base and froze it. I used 3 c. dry tri-color rotini cooked to al dente, but would use 4 c. next time. Otherwise I didn't change the basics. However, I think black olives and a sprinkle of Parmesan would be good additions.

I too used my own baked chicken. Good combo of ingredients and very pretty. Added some carrot as well. I only had bow-tie pasta, but that worked beautifully.
