Cookie Pops on a Stick!!

"Cookie pops for bouquets or centerpieces 'On Sticks'. Vanilla is the standard flavoring but just about any flavoring (extract) can be used try almond, maple, lemon, orange - you be the judge! This double recipe is easily halved."

INGREDIENTS

  • 2 cups butter, softened
  • 1 teaspoon baking soda
  • 2 1/2 cups white sugar
  • 1 teaspoon vanilla extract
  • 4 1/2 cups self-rising flour
  • 24 popsicle sticks

DIRECTIONS

  1. Preheat oven to 350 degrees F (180 degrees C).
  2. Combine butter or margarine, baking soda, white sugar and your favorite extract flavor. Beat these ingredients together with an electric mixer until fluffy. Add self-rising flour Beat well.
  3. Roll dough into walnut sized balls. Place them two inches apart onto the cookie sheet and flatten slightly. Press ice cream stick into the flattened side of the cookie, and press down. This way, you know how large the cookie will be when baked. Add whatever topping to each cookie you like, OR, before pressing stick into the cookie, roll each cookie into sprinkles first, then flatten.
  4. Bake until edges are lightly golden.

I made these cookie pops to use in a 'flower pot' arrangement! Be aware not to make them too large/heavy or else you will have trouble with them staying up in the pot! Very large & sweet cookies. I'll make them with a tad less sugar next time! But they are great fun for the family to make together!

Even I had fun making these cookies and seeing the end result! So easy and my 5 year olds had fun putting the stick in. Popsicle sticks are in any craft store and inexpensive. Very tasty, like a sugar cookie and such a novelty. It stayed on the stick, didn't break off too easily. I had my kids give one to each neighbor. Next time I'll have the kids glue small cut out paper leaves and glue two on the stick. You could come up with all kinds of ideas.

We made little baskets and put these inside for my son's grandparents for Grandparent's Day. They turned out ok. My son had a lot of fun making them. He was very proud of his creation.
