Original Recipe Yield 2 10 inch pizza pans (24 wedges)
 

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 1/3 cups rolled oats
  • 1 cup butter
  • 1 1/2 cups packed brown sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups shredded coconut
  • 2 cups semisweet chocolate chips
  • 1/2 cup chopped walnuts
  • 1 cup candy-coated chocolate pieces
  • 1 cup peanuts

Directions

  1. Combine flour, baking soda, salt and oats. Stir well to blend. Cream butter, brown sugar, eggs and vanilla together thoroughly. Add flour mixture to creamed mixture. Mix well.
  2. Stir in 1/2 cup coconut and chopped nuts. Spread dough evenly in 2 greased 10 inch pizza pans or press into 10 inch circles on greased baking sheets.
  3. Bake at 350 degrees F (175 degrees C) for 10 minutes. Remove from oven.
  4. Sprinkle with chocolate, remaining 1 cup coconut, candies and peanuts. Bake for 5-10 minutes longer or until golden brown. Cool in pans on wire racks. Cut cooled cookie pizza into wedges.
