A very nice, nutritional variation. The vegetable puree ensures a smooth texture that cooks well, crisp and soft as indicated. My advice is to use herbs sparingly when using the pancake as a side dish; the veggies have a nice flavor on their own. I cut out the sugar as well. The next day, I added cheese, tomato, and avocado slices for a simple, tasty lunch.
Note: I didn’t think about this, but leaving the zucchini skins on results in Frankenstein-green pancakes. Omit peeling and be prepared with a disclaimer, I guess.
