This is my go-to quick, easy, and delicious salad. I always have a big supply of canned beans on hand so when I want to make this it's a snap. Lots of color, great taste, and everyone enjoys it. It makes a lot, so I get to enjoy it for a couple of days. Yay! The dressing seems a bit more than necessary, so I'm experimenting with cutting back on the oil and vinegar a bit so the "day 2" servings aren't swimming in it. I'm not usually a fan of cilantro, but it seems like the key ingredient in this for a hit of that fresh, zingy flavor. Try it out!

I made this because I love beans and peppers and it was so colourful and pretty. I had my brother over for dinner and when I tasted it, I thought not much flavour except the beans and onion. I expected it to be more tangy like other bean salads I`ve made. After dinner I asked what he thought. He said not much flavour, the main thing I could taste were onions and not the dressing.

This is a delicious salad bursting with beautiful color and freshness. It's very easy to make and convenient to make a day ahead. I like cilantro and think it really makes the salad so would definitely not omit or substitute with parsley if possible.

Love the salad....I followed the recommendation from one reviewer: 1/3 cup apple cider vinegar 1/3 cup granulated sugar 1/4 cup olive oil 1 1/2 teaspoons salt 1/4 teaspoon black pepper....also instead of red pepper, I added chopped roasted pepper

If you like beans you will love this! It is bursting with flavor, perfect vinegar balance and it's so colourful. So easy to make, yet tastes and looks good on any table!
