The start of summer means lighter meals, and ceviche is delicious, and quick to prepare. This is great served on a bed of lettuce or in a martini glass, with tortilla chips or wonton crisps for dipping.

This has always been a crowd pleaser in my home. This is wonderful as an appetizer served on tostadas or even with tortilla chips. Make sure to refrigerate before you serve, it tastes best when very cold. I like to serve on tostadas with a thin layer of mayonnaise for a nice refreshing lunch.

For best results freeze tofu for at least 24 hours in advance. The tofu and pineapple are marinated, for at least an hour, in teriyaki sauce and then baked. 

Fried Squid with Pineapple (Muc Xao Thom)

This tangy and sweet dish is perfect served over fluffy white rice. Be sure and not to overcook the squid or it will become tough.
