INGREDIENTS

  • 2 pounds baby carrots or quartered medium carrots
  • 1/4 cup water
  • 1/4 cup butter or margarine
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt

DIRECTIONS

  1. Place the carrots in an ungreased 9-in. square baking dish. Add water; dot with butter. Sprinkle with oregano and salt. Cover and bake at 325 degrees F for 1-1/4 hours or until tender.

Nutritional Analysis: One 1/2-cup serving (prepared with margarine) equals 67 calories, 168 mg sodium, 0 cholesterol, 8 gm carbohydrate, 1 gm protein, 4 gm fat. Diabetic Exchanges: 1 vegetable, 1 fat.

much more flavorful than i imagined and very easy to make. will definitely make again!

I made these and people liked them, but no one raved about them. Next time I think I will cover the carrots in the oven so they steam a little, there was still water in the pan, so I think the problem was it evaporating into now where, not into the carrots.

the carrots ended up really dry and where almost impossible to eat. the next time i made it I had to add alot more water.
