Colorful Vegetable Saute

INGREDIENTS
2 medium sweet red peppers, julienned
2 medium green peppers, julienned
2 medium zucchini, julienned
4 medium carrots, julienned
1 tablespoon olive or vegetable oil
4 cups thinly sliced red cabbage
1/4 teaspoon salt
1/4 teaspoon pepper
4 teaspoons cider or white wine vinegar
1/4 cup water
1 tablespoon sesame seeds, toasted

DIRECTIONS
In a large skillet, saute peppers, zucchini and carrots in oil for 5 minutes. Add cabbage, salt and pepper; saute 1 minute longer. Combine vinegar and water; pour over the vegetables. Saute 3 minutes more. Sprinkle with sesame seeds; cook and stir for 1 minute.

This recipe was really good actually. Very nice and colorful with good flavor. I did not add the red cabbage because I did not have any. Instead I used red onion. For regular salt I substituted with a teaspoon of garlic salt and did not add the water because I thought the cider vinegar was enough. I will do this recipe again. It was very tasty.

This was pretty good as directed. I made a lot and did find out you need to serve immediately for the best flavor. I used the leftovers the next night by sauteing one fresh minced garlic clove, 1/4 cup sliced onion (in olive oil), and then the vegetables. I served it over baked whole wheat tortilla chips, browned ground beef, and then put light sour cream and salsa. It was similiar to a healthy fajita and it was wonderful. The color is beautiful, even my kids said so. I will make this again.

Very nice. I did not have sesame, and did not find it necessary to add water. Added yellow summer squash. Pretty and healthy with all those veggies and nice flavor combination.
