Based on what we had in the house and my personal preference, I used red peppers instead of green and used Roma tomatoes instead of plum. I also opted for fresh green beans. We added onions (highly recommend), minced garlic, some garlic powder, basil, and thyme, to add more flavor. I agree that it turned out more "eggy" than I expected, but it was tasty and got compliments around the table. I ate leftovers for breakfast and it was quite tasty reheated. NOTE: Increase prep time from 10 to 30-45 minutes depending on your cooking experience level, how many veggies you're adding, and whether you're hand-chopping or using pre-chopped.
