Colorful Chicken Casserole

INGREDIENTS
1 cup chopped celery
1 cup chopped green pepper
3/4 cup chopped onion
2 tablespoons butter
1 cup chicken broth
1 cup frozen corn
1 cup frozen peas
1 teaspoon salt
1/4 teaspoon pepper
3 cups cubed cooked chicken
1 (7 ounce) package elbow macaroni
1 (4.5 ounce) jar sliced mushrooms, drained
1 cup shredded Cheddar cheese

DIRECTIONS
In a large skillet, saute celery, green pepper and onion in butter until tender. Add broth, corn, peas and salt if desired and pepper; heat through. Stir in chicken and spaghetti.
Divide between two 8-in. square baking dishes coated with nonstick cooking spray. Top with mushrooms and cheese.
Cover and freeze one casserole for up to 3 months. Cover and bake the second casserole at 350 degrees F for 20 minutes. Uncover and bake 10 minutes longer or until heated through.
To use frozen casserole: Bake at 350 degrees F for 35 minutes. Uncover and bake 15 minutes longer or until heated through.

Nutritional Analysis: One 1-cup serving (prepared with margarine, low-sodium broth and reduced-fat cheese and without salt) equals 248 calories, 232 mg sodium, 35 mg cholesterol, 30 gm carbohydrate, 18 gm protein, 6 gm fat. Diabetic Exchanges: 2 starch, 2 lean meat. 8 servings.

This is a good basic recipe but you need to add things to it to make it more flavorful. I added red bell peppers and yellow squash to the veggies. I added about 1/4 c. white wine when I added the chicken and pasta. I noticed I needed more broth so I added 1 can of cream of celery and about 1/3c more broth. The pasta would have absorbed all of the broth had I not added extra. I seasoned with salt and pepper then put it in the oven. The cooking times are RIGHT ON. I only made 1/2 a serving and it seriously made enough for 4 people with left overs. It's a good quick recipe to use left over chicken. Thanks so much.

I'm not sure what went wrong, but the noodles didn't really cook. They were gummy and hard. The ones on the bottom cooked ok, and I stirred it halfway through to make sure all the noodles would cook. I didn't understand how the noodles would cook if they weren't cooked on the stove first, but I followed the recipe anyway. I even added extra water before putting it in the oven, but it was no use. My husband took one look at it and said "I'm not eating that!" which he's never said before. It was so disgusting I threw it out. I seasoned the chicken before putting it in, and the overall flavor was ok but the noodles are a problem. Maybe it would work better if they were cooked first.

I am usually drawn to more complex recipes than this but wanted something easy for my family. This recipe was surprisingly tasty given its simple ingredients. The flavor comes directly from the vegetables and could easily be added to with herbs or spices. Its a great template for a healthy tasty recipe. It had a good consistency too.

Gross. I like healthy food but this had no taste. I was really surprised because I have always enjoyed the recipes I have made that have a 5 star average. Will not make this again.

Very good and easy! The only change I made was that I used sliced fresh mushrooms instead of canned mushrooms (because I don't like the taste of canned mushrooms). I added the mushrooms when I added the frozen peas and corn to cook them a bit before going in the oven. The mushrooms turned out great and packed with flavor.

Excellent recipe! I added a few items such as garlic powder and a can of cream of chicken soup with 1/2 can milk. I baked ALL of it so we have lots of leftovers. My 2 1/2 year old and 1 year old LOVED it! Definately a keeper!

What a tasty, healthy, easy recipe! As another reviewer said, it makes a good formula for your own tastes. Next time, I will replace the celery and corn with spinach and sun-dried tomatos for a more Italian twist. Thank you for posting this one, it's a keeper!

IICCKKYYY... not only is this dish ugly and stinky but it tastes bland and seems hardly fit to eat. I usually liek the stuff on this site but this was YUCKYYYY!!!! I had about 2/3 leftover after i served it to my family of four (i halved the recipe)!!!!!
