Cold Asparagus with Curry Dip

"A delicious creamy dip for cold or hot asparagus or even artichokes. It is also excellent on potatoes and other veggies."

INGREDIENTS

  • 1 bunch fresh asparagus spears, trimmed
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons curry powder

DIRECTIONS

  1. Bring a pot of lightly salted water to a boil. Add asparagus, and cook for about 7 minutes, until bright green. Remove to a bowl of ice water to cool. Drain and set aside.
  2. In a medium bowl, stir together the mayonnaise, sour cream and curry powder. Transfer to a nice serving dish, and serve with chilled asparagus.

Perfect dip! A local irish pub serves a curry dip with their fries and I was craving it. THIS was exactly what I was looking for. It's great with veggies, and french fries, and tonight I am going to use it with fried zucchini. Thank you.

Wow! How can something that tastes so great be so easy?!! This tastes just like the dip that Melting Pot Restaurant uses. It's great on steamed or grilled veggies and even chunks of grilled meat. For the most healthy, I steam the veggie and use light mayo and light sour cream--still delicious.

This was soooo easy and very delicious. Different, too. I served with the balnched asparagus, and added red and green pepper strips, and cherry tomatoes to the platter for a Christmasssy feel. Well done, touche!
