So simple and so good. I cooked the onions and cabbage in a little butter, then added to the cooking potatos. Can't beat the flavor.

To save a bit of cooking time, I sauteed the onions and the cabbage while the potatoes cooked, then added them together and mashed with butter and s&p. Used bagged cole slaw mix, so ended up with a little extra color in this dish from the pieces of carrot. VERY tasty garnished with a dollop of sour cream & chives.

I made this St. Patrick's Day Bunco party and it was well received. When I make it the next time I will probably add more butter and some cheddar to step up flavor.

I make this reciepe throughout the year, I do change it around spring time, I use red cabbage instead, and have a lovely lavender color, my kids think it's the bomb.

All I changed in this was to add a little milk and some leftover cooked carrots. My family loved this one, will definitely make again.

I am no cooker but this came out awesome. I added 2 things though...1 cup of milk stirred in while mashing and fresh cut scallions. 1 small bunch of them. Came out GREAT.

This is a very good recipe that I have made for years. I grate Irish cheddar cheese and slice green onions to sprinke on top. Yummy!

traditional colcannon is made with kale rather than cabbage....so kale is a very good substitute and changes the flavor so it is more subtle.
