Cola Sauerkraut

"A sauerkraut that is great for dishes from sausage to pork or just by itself. Every time a recipe calls for sauerkraut I use this."

INGREDIENTS

  • 1/2 cup butter
  • 2 medium onions, chopped
  • 2 (16 ounce) jars sauerkraut
  • 1 (12 fluid ounce) can cola-flavored carbonated beverage
  • 1/2 cup water (optional)

DIRECTIONS

  1. Melt the butter in a large skillet or Dutch oven over medium heat. Saute onions in butter until translucent. Stir in the sauerkraut and cola.
  2. Cover, reduce heat to low, and simmer for 1 hour, adding up to 1/2 cup of water if necessary to prevent sticking. Remove cover and increase heat to medium for at least 15 minutes, or until most of the juice cooks down, and the sauerkraut glistens.

I stumbled on to this recipe and was hesitant at first, but this is a great way to make sauerkraut!! Before I would fry it like my Mom did with onions and a little garlic then I added some brown sugar to it or I would bake it with the pork roast, but this recipe beats the other ways by far! So simple and has a great taste, my husband really goes "bananas" when I make this with pork roast!! The flavor is just great! This recipe replaces Mom's. Thanks for a great recipe!!

I made this for Christmas dinner. I added in li'l smokies (mini sausages) my husband gives it 5 stars with the addin.

Any recipe that starts with a whole stick of butter ought to have something going for it, right? Excellent - and it got the approval of my Slovak/Ukranian grandmother - a woman who knows her sauerkraut!
