Directions

  1. Slice an 'X' in the bottom of each tomato. Bring a pot of water to a boil; boil tomatoes for 2 minutes. Remove with a slotted spoon and place in a bowl of iced water for 1 minute. Peel tomatoes, starting from the 'X' side; chop.
  2. Heat vegetable oil in a skillet over low heat; cook and stir onion and garlic until fragrant, about 2 minutes. Add chile pepper and tomatoes; cook and stir until tomatoes begin reduce, 5 to 8 minutes. Pour in wine; cook over medium heat until wine reduces slightly, about 5 more minutes. Stir in salt, black pepper, basil, and parsley.
  3. Place cod loins into tomato mixture; cover and cook for 5 minutes. Turn cod and cook other side until fish flakes easily with a fork, 3 to 5 minutes. Add prawns; cover and cook until prawns are bright pink on the outside and the meat is no longer transparent in the center, 2 to 3 minutes. Season with salt and black pepper.

Cooked exactly as written, it was delicious! Added to our recipe box, we'll be having this again. Served with roasted veggies, great heart healthy meal.

Great recipe! Not difficult to make, very healthy, and everyone loved it! I used a 14-oz can of diced tomatoes, left out the prawns, added some green olives, and used a pound of fish, which made four servings. Grilled veggies with some balsamic vinegar were the perfect side dish. Crusty dinner rolls were great for sopping up the yummy pan juices. Would make a great dinner party dish.

This is a great recipe. I've made it for a number of people and everybody loves it. The only change I made was I used canned stewed tomatoes instead of cooking fresh tomatoes.

I've been a member of all recipe's for perhaps 3 years now and this is the first recipe that has moved me to post. I made it according to recipe and absolutely loved it! I served it over a bed of wheat tortellini and a little of the chardonnay I used in the recipie on the side.

Made this tonight for a husband who doesn't like fish, and even he enjoyed the cod! I didn't have prawns and just made it as the recipe called for, though next time I'll use olive oil instead of vegetable. Also, I substituted a couple dashes of red cayenne for the red chili pepper, so it still had a kid. Excellent & will make this again.

Absolutely delicious! I didn't use any prawns because I didn't have any- but I made this recipe exactly and it was WONDERFUL! Would not change a thing

Great dish. I made this without the red chili pepper. I used a small amount of red pepper flakes instead. I will definitely cook this again.

I didn't have any prawns on hand, even without, a very nice blend of flavors. I sub'd olive oil for the vegetable oil.
