Shrimp that are dipped in a scrumptious batter, rolled in coconut, fried, then baked. The dipping sauce is the clincher: marmalade, honey, hot sauce and mustard!

Coconut Milk Shrimp Soup

I threw these ingredients together when I realized I had half a can of coconut milk left in the fridge that was about to go bad. All in all, I think it came out pretty good! It's very variable and the coconut flavor is not too strong.

Fish sauce, lime juice, garlic, and sugar make a dressing for a salad featuring shrimp, chicken, grapefruit, and coconut. If pomelo is available in your area, use it in place of the grapefruit.

Succulent shrimp twice-coated in seasoned flour and deep fried, then coated in an extremely spicy butter sauce. Perfect for those who crave the heat. For added heat, slice up some fresh cayenne or jalapeno peppers to sprinkle over the top. Serve with lemon wedges and blue cheese dressing on the side.

Best Shrimp Toast Ever!

These delectable treats are a great diversion from standard appetizer fare. Chopped shrimp, seasoned with fresh ginger and oyster sauce, are spread on toast points and deep fried. Very delicious and easy to make, they may be served warm, or at room temperature.

Fresh shrimp are butterflied then stuffed with cheese and roasted red pepper before wrapping in proscuitto. A panko breading finishes these off before they get fried into crunchy goodness.
