We were married recently in hawaii and wanted to throw a luau when we returned. This is the cake I chose to make, and wow, was it a hit. It had an "island" flare to it and I had many requests for the recipe!

Living in Singapore, we like to do a good tropical BBQ every now & then...this cake was PERFECT for our last grill-up! Easy to do, and not too much time in the kitchen, which is great, since it is usually 90 degrees f. year-round here!

Awesome coconut cake. I've been making this for a while. However, I recommend adding 1 tsp. coconut extract to the batter and using homemade whipped cream on top, sprinkled with coconut. Yum!!

I made this recipe this weekend and nobody was very excited about it......until they tasted it!! They loved it so much that they made me freeze the leftovers instead of giving it away to any of the guests. I used real whipped cream instead of whipped topping. It was wonderful. Thanks for the recipe!

This is absolutly awesome. You must be a coconut lover to truely appreciate this cake. Hint: coconut milk is NOT coconut cream. you can usually find cream in the alcolic mixers aisle of the grocery store!
