This truly was a simple and easy recipe to make. My family loved it. The one thing I did differently was add pecans.

I tried this recipe today for Sunday dinner and it didn’t work. I always follow a recipe as given the first time around, but as given this pie never sets. Believe it or not in total I cooked this pie for 1 ½ hours! I will say it came out looking just like the photo, which was nice. But the pie itself never set up as it should have. It smelled and looked nice but that was it, to bad, I was really looking forward to it. I think I will keep the recipe and play with it a bit, as the others did and see what happens.

Took the advise of another reviewer and used pineapple with heavy syrup and half the recommended corn syrup then replaced the other half with creme de coconut. I also, reduced the sugar to 3/4 cup and toasted the coconut. Comes out picture perfect with a great tropical flavor.

yummm! But you know what makes it even yummier?? Use the pineapple in heavy syrup, and then use half the recommended corn syrup and replace the other half with creme de coconut. (like pepe lopez - the cans of coconut creme usually found with the drink mixers)
