1 1/2 cups milk
1 cup sugar
3/4 cup shredded coconut
2 eggs, beaten
3 tablespoons all-purpose flour
1 tablespoon butter or margarine, melted
1/4 teaspoon vanilla extract
1 (9 inch) unbaked pastry shell

DIRECTIONS
In a large bowl, place milk, sugar, coconut, eggs, flour, butter and vanilla; stir until combined. Pour into pie shell. Bake at 350 degrees F for 50 minutes or until a knife inserted near the center comes out clean. Cool to room temperature. Refrigerate leftovers.

I was looking for a quick and uncomplicated recipe for pie and boy did I strike gold!! I have cooked this pie 3 times in a little over a week!! Since my grandmother passed away I haven't had a good home cooked coconut pie. My son who is sooooo picky nearly at the first pie right by himself. I couldn't believe it. I took one pie to work and it was a huge hit. It's so simple. Be sure and use the deep dish crust!! Thanks!

Great pie. Reminded me of an old fashion coconut pie. Added 1 cup of sweetened coconut but it was a little too stiff. Next time I will add only 3/4 cup to the recipe. Very easy. Love it!

Delicious, coconutty (I used 1 Cup of coconut), tastes good on its own or with vanilla ice cream. I will definitely make this again.
