Ingredients

  • 1 cup butter or margarine, softened
  • 2 cups packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 1/2 cups flaked coconut
  • 1 cup chopped pecans
  • confectioners' sugar

Directions

  1. In a mixing bowl, cream butter and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, salt and baking powder; gradually add to the creamed mixture. Stir in coconut and pecans (batter will be thick).
  2. Spread into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350 degrees F for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar. Cut into bars.
