Maybe it's because I'm a coconut fanatic, but these are awesome-good. A quick note before I go on: they are more like a muffin than a cupcake, as some others have commented. They are a bit heavier and not as sweet as a cupcake... However, I love the light citrusy flavor they have and the coconut topping takes them over the top. I decided to use sugar in the raw for the topping and it worked out nicely. My batch: I only was able to get 16 cupcakes and they baked in about 18 minutes. And I skipped the mandarin oranges... just didn't feel like adding them. I'd make these again in a heartbeat. My coworkers are loving them! (PS: my crappy photo from my phone does not do these babies justice!)

I do not like the canned mandarin oranges so instead I used dried craisins! Perfect addition to this recipe!

These are so pretty and have a great flavor combination of oranges and coconut. The only change I made was to cut back the sugar to 3/4 c. and next time, I'll cut the sugar some more. As written, these muffins have too much sugar and oil for us. I recommend this recipe with chopped mandarin oranges, less sugar, and a an applesauce/oil mixture to reduce the oil. The muffins may be even better with fewer vanilla/white chips since they seem to be "sugar chips" in the muffin rather than adding a subtle vanilla flavor to the recipe.

These are so fun to make!! I made them for a party and someone asked me to make them for his next get together! I did cut the oranges into smaller pieces but kept everything else the same.

Delicious, light and different. A friend likes coconut but can't have dairy and I found this as an alternative to all the coconut desserts with milk and cream cheese in the recipe. I made it as stated in the recipe with the exception of cutting up the orange pieces in thirds. I think you can easily make variations to these as per other reviewers. I may decrease the oil a little next time (1/2 cup) and add some coconut into the batter, and will try chocolate chips in the future (I Love orange and chocolate together), and may also try a chocolate drizzle over the topping.

Does this recipe really call for 1 TABLESPOON of baking powder? I made it as the recipe says and mine cupcakes rose too much then fell flat. I'm wondering if it's supposed to say 1 TEASPOON baking powder. They still taste good but look awful.
