These cookies were very yummy! Although somewhat time consuming to make, I blame it on myself for trying to get too fancy with the cookie cutters. The coconut topping was a nice combo with the lemon and shortbread-like cookies. I would definitely make these again! Make sure you roll the dough out pretty thin...otherwise the cookies end up being pretty large once stacked and more cakey than crunchy.
