Coconut Curry Black Bean Burgers - Thai Style!

  1. Blend the black beans, red onion, garlic, 1/2 teaspoon salt, 1 teaspoon chile sauce, curry paste, coconut milk, 1 teaspoon brown sugar, cayenne pepper, and egg in a food processor until smooth. Scrape the mixture into a large bowl. Fold the bread crumbs and burger crumbles into the mixture. Form the mixture into 6 patties and place on waxed paper. Put in freezer for up to 30 minutes for patties to set.
  2. Prepare a grill pan or skillet with cooking spray and place over medium heat. Cook the patties until browned, 4 to 5 minutes per side.
  3. Meanwhile, combine the peanut butter, 1 teaspoon chile sauce, 1 teaspoon brown sugar, 1/2 teaspoon salt, turmeric, soy sauce, and canola oil in a saucepan over medium-low heat. Cook and stir until the peanut butter is melted. Reduce heat to low and simmer until hot, 3 to 5 minutes.
  4. Arrange patties on bottoms of hamburger buns. Drizzle sauce over each patty; top with carrot, cucumber, green onion, mint, and cilantro. Top with remaining bun halves and serve immediately.

Pretty well recieved in my house. Liked by all. I was short on bread crumbs , so just added some cheerio meal;-). No time to shred carrots , just sliced them thin. Loved it!

Oh my goodness -yikes! We could not finish these. I love all the flavors, but somehow in these patties they end up tasting like old, flacid fish cakes. The texture alone is enough to gross you out. Sorry, maybe these are for someone, but we were very disappointed!

Not Bad. I liked it but didn't love it. A little time intensive for the results. Most of the flavor came from the P-nut butter and the mint, not the burger. It should definitely be tried at least once.

You need to live in a grocery store to make these. Look at the list of ingredients-it's a mile long! I modified the recipe because I didn't have all the ingredients and didn't want to spend a hundred dollars on this recipe. It didn't turn out very well.

A really unique alternative to the average burger!

The main problem I had with this recipe is, where's the tofu in the instructions? I added it with the bread crumbs and veggie burger crumbles, but that made more than a dozen patties! I'm guessing it was supposed to be either the tofu OR the crumbles, not both. If I had known that going in, I'm sure the flavor would have been more intense. As it was, these were fine, but nothing exciting.
