This is my husbands favorite pie and I made this recipe for his birthday to very rave reviews- the best he has ever had. I followed the instructions to a 'T' and included the suggestion of using coconut extract instead of vanilla- which rounded out the flavor. I also used sweetened coconut- which made it sweeter but not too sweet.

This pie is excellent!!!!!!Only exception was i doubled the recipe and added extra coconut and a little more cornstarch....It came out beautiful!!!!!!!!!

This was super delicious. I am adding this recipe to my collection. I had friends who went back for seconds! I did not try the meringue recipe, however, but used the "Never-Ever-Fail Meringue" recipe from this site. It was the best pie to date that I have ever made!

After 48 years of cooking, I made my first coconut cream pie for my husband's birthday this week since it is one of his favorite kinds of pie. I made two and they both turned out perfect and I got lots of rave reviews from both husband and family. Yummy taste and no problem with being "runny". Did take a little extra effort, so it will be one of those special occasion desserts. We don't need all that sugar very often anyway.LOL Thanks so much for the recipe!

yum! This beats the other recipe I was using. I used unsweetened, dried coconut and moistened it in water. I used coconut oil instead of butter. I had no cream of tartar for my meringue, so I heated 1/3 cup cold water plus 1 tbsp cornstarch until just thickened (stir often!), cooled it, and whipped it into the whites after the sugar. No sweating or beading this way and it won't alter the taste as much as cream of tartar. The result was delicious!!!!!

My family and I love all kinds of different pies, but this one is the winner. The filling is great not to sweet, just the right flavor. The only thing I will do different next time is to make my own crust. Thanks for sharing.

This is absolutely delicious. I've made this several times. My husband asks me to make this continually. He's not a fan of desserts as a rule! I use the Land O' Lakes crust recipe and they compliment each other very well.

I tried to make this recipe twice but the filling always turns out liquidy meaning it never setted. I've might have not beaten the meringue enough but I don't think so.

For the longest time, I feared baking meringue pies until recently. Now, in our baker's absence, I've been requested to bake them! This is the best recipe, period! I do add 1/2 tsp. vanilla to the meringue for just a hint of flavor in the meringue.

This pie tasted fantastic! It was exactly the taste I was looking for. I had two minor issues with the recipe. First, I like a lot of meringue so next time I will double the meringue portion. Second, the pie 'weeped' or formed a liquid layer between the meringue and the cream layer. After I cut the first piece, all the weeping ran into the pie pan. My aunt, who bakes all the time, said to use half sugar, half Splenda and that should fix the weeping, so next time I will try that. But once I cleaned up the liquid, the pie was still fantastic.

This is so good! Coconut cream pie is my favorite. I did not use the meringue on top, I just toasted some of the coconut and sprinkled on top,3/4 cup in pie and 1/4 cup on top. I also cut the sugar down to 1/3 cup. The coconut I used was sweetend and my family doesn't really like things too sweet. I just ate this with some coffee for breakfast, and it was just what I wanted.
