I followed the suggestions -- 1 1/2 times the crust and used sweetened whipped cream (2 cups heavy cream, 3/4 cups powdered sugar and 1/2 teaspoon vanilla extract) instead of CoolWhip and it was FANTASTIC. I ran out and bought some more coconut cream pudding mix so I can make it again!!!

This is great! Made it for company and it did not disappoint. The super market didn't have instant pudding so I made cooked: 3 pkgs. with the 4 cups of milk. It did not get as firm as instant, but it tasted wonderful and I was able to cut and serve it.

Great dessert. Everyone wanted the recipe. Next time I'm going to try it with chocolate pudding and mini-chocolate chips on top.

I made this at a dinner and the family loved it! Some tend to think it's a bit on the heavy side which it is but its mainly pudding so depends if you like that or not. I use vanilla pudding and then add some coconut flakes to it.

I'm sorry but this dessert did not knock my socks off. I loved the base but the coconut pudding seemed heavy without enough distinction (I love coconut by the way. Perhaps that delicious base was too flavorful for the coconut and the two just did not pair well. I will try with just vanilla. Coconut might work well with just the graham cracker layering as in the Bavarian Creme dessert.
