Coconut Chocolate Chip Cookies

INGREDIENTS
1/2 cup butter or margarine, softened
3/4 cup sugar
1 egg
1/2 teaspoon coconut extract
1 1/8 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips
1/2 cup flaked coconut

DIRECTIONS
In a mixing bowl, cream butter and sugar. Beat in egg and coconut extract; mix well. Combine the flour, baking soda and salt; add to the creamed mixture. Stir in chocolate chips and coconut.
Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375 degrees F for 11-13 minutes or until golden brown. Remove to wire racks to cool.

I made several modifications to this recipe to accomodate what I had in my pantry, so I'm not sure how different my version came out, but it was very good--moist and fairly light. I was using sweetened coconut and milk chocolate chips, so I reduced the sugar and added more flour. They still came out a bit too sweet for my taste, but my husband loved them. I changed the following in my variation: coconut: 3/4 cup, sweetened; chocolate chips: milk chocolate instead; sugar: reduced to 1/2 cup; flour: increased to 1 1/2 cups; extract: used vanilla instead of coconut; eggs: added an extra egg for moisture.

Cookies were easy to make, took the 10 minutes, turning the cookie sheet once - during baking. I added to 2 teaspoons of Cinnamon. The cookies stayed compact, and were pretty. Husband liked them, I didn't care for them, because I like really sweet cookies.

These cookies are delicious! I am not a fan of coconut, but made the cookies for my coconut loving family members. I tasted one before serving and was so delighted at the flavor. The coconut is not overwhelming. I used butter and vanilla extract in my recipe. Thank you for sharing this recipe!

I thought these were excellent. I brought them to a get together and they were gone in 20 minutes. I substitued coconut extract for almond because I didn't have any coconut, I dont know if it made a real differnence or not, but they were really good cookies. I would make them again, and share the recipe.

I thought these cookies were only so-so. My family liked them, but they weren't moist enough for my taste. They were hard and crunchy and flavor was just ok. I didn't think they were moist enough or sweet enough (they don't sell sweetened coconut where I live, so I just used flaked coconut plus the extract)

i love this recipe! I would say that they are a little bit too sweet for me (i'm not a huge sweet tooth) and next time I think I might add more coconut flakes because the taste is quite subtle.

If you love coconut, these are the best cookies ever! Everytime I make these, they are gone in minutes. People will not be able to resist them!
