INGREDIENTS
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 bottle (1 ounce) red food coloring
3 teaspoons white vinegar
1 teaspoon butter flavoring
1 teaspoon vanilla extract
2 1/2 cups cake flour
1/4 cup baking cocoa
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
FROSTING:
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
3 3/4 cups confectioners' sugar
3 teaspoons vanilla extract

DIRECTIONS
In a large mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in food coloring, vinegar, butter flavoring and vanilla. Combine the flour, cocoa, baking soda and salt; add to creamed mixture alternately with buttermilk.
Pour into three greased and floured 9-in. round baking pans. Bake at 350 degrees F for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
In a large mixing bowl, combine frosting ingredients; beat until smooth and creamy. Spread between layers and over top and sides of cake.

My daughter wanted this cake for her 21st birthday and after looking at all of them, I decided to try it. It turned out great, my daughter loved it. The only thing I did different was since I didn't have cake flour, I sifted all purpose flour and increased the baking soda to 1 1/2 t. Thanks for the recipe.

Simply fantastic! The only thing I did differently was add about a tablespoon more shortening (it looked a little dry :)) This one is a keeper! -Heather

This was great I wanted red velvet from scratch not out of the box and I actually made it in a regular cake pan instead of round ones to save on time and it was still terrific and the icing was great my kids loved it and my 4 yr old usually just eats the icing but she ate it all and wanted more.

Wonderful cake! I didn't have cake flour so I researched a substittute and found that 1 cup all purpose flour minus 2 tablespoons is the equivalant to 1 cup cake flour. So I took 5 tablespoons of all purpose flour away from the 2 and 1/2 cups the recipe called for and the cake came out great!

This recipe is a keeper. I could not find cake flour (Night before Thanksgiving), but I just coverted the recipe where I could use all purpose flour. The frosting was to die for. I kept licking the bowl.

This cake was WAY too dry. It crumbled out of the pan after it was cooled and even when we ate it, it was crumbly and dry. I wouldn't make this recipe again.

this was a very good cake. i used vegetable oil instead of crisco and everyone loved it. had trouble with my icing, so i had to fall back on the cream cheese version. but all in all everyone at the dinner loved it. it was the first cake gone!

This recipe was not very good...I had to add a lot more shortening than it said to...it was very dry. I think that the recipe needs some work. I made it for a family get together, they hated it. I have never made a bad cake before...this one just didn't work.
