I can't believe I haven't rated this recipe yet. I've been making it since the winter and everyone raves about it. We all really love it. Delicious filling meal that no one can get enough of. Can't thank you enough for this wonderful addition to our dinner menu.

Everyone loved it, including those in the family that cannot understand me being a vegan! It's just another recipe that we can have in common. My sister-in-law, who says she lives for meat, asked for the recipe. Thank you.

I added a large can of whole tomatoes to it and it really added a tremendous flavor to this wonderful soup! Depending on the noodles you use, this also freezes well. :)

I recommend cooking the vegetables with garlic and also adding fresh basil to the soup. I added potatoes as well and it was fantastic!!

This was good! I used chopped fresh tomatoes and added garlic and italian herbs and 2 potatoes diced. It was also good leftover for lunch the next day.

I am not much of a vegetarian, but I cooked this for friends of mine and they universally said that it was great, even though I didn't get the recipe entirely right. This means that if I can do it well anyone can. Great Recipe
