This recipe was great, I will definitely do it again. I didn't add pasta, though, but toasted some parmesan bread instead...yum! I also added potatos and garlic, and substituted onions for leeks. Instead of thyme I used Italian Herbs (because I didn't have any thyme). I'll definitely make it again!

This recipe is awesome. My husband is a vegetarian so I'm always looking for new and good meatless recipies. This soup is very easy to make and it truly is wonderful. I have made it at least 6 or 7 times already for us and family, everyone loves it. The only thing I added was potatoes because I love them so much, other than that I stick with the recipe and am very happy to have found it. If you like minestrone soup, one must at least give this recipie a try. Yummy!!

Followed the suggestions of some previous reviewers, and added tatties and garlic. Also threw in some zucchini, and other extra veggies. Wonderful soup for the cold winter months. Definitely a keeper! Mmm... :o)

Great soup -- everyone who tries it demands the recipe. Improved by adding a clove of garlic IMO. Also like to add some shredded cabbage.

This was the first really good soup I've made thus far! I liked the flavor, but next time would prefer it a bit spicier. I added slightly more noodles than called for, and would recommend NOT doing that, as it made it much too thick, especially after refrigeration. I did make it a day in advance, and it kept well for a week until we ate it all! Thanks!

WOW! What yummy soup. I am going to make it again tonight. I even added a little umph to it by adding some of my homemade pesto - it made the soup a little more robust. Definitely going into my permanent collection - thanks.

This minestrone is so good because of all the fresh ingredients...the only thing canned is the beans. I sliced my tomatoes thin with a food processor, and it made the soup very attractive as well as tasty. Served it to about 15 friends and they all loved it!

Truly sensational!! I substituted drained, whole tomatoes, cut up. Delicious, wholesome, nourishing and filling. You don't have to be a vegetarian to appreciate this minestrone.

Ah, yes... A blustery fall evening with friends was warmed up with this soup recipe served with homemade bread. As I have a hard time leaving recipes the way they are, I added shredded cabbage, omitted the zukes, sprinkled a generous amount of fresh parsley in addition to the thyme, and I used canned tomatoes in lack of fresh ones. The result was just as hearty as I hoped it would be. Colorful, rich and made plenty; I recommend this to anyone as a number one comfort food.

This is a woderful soup.Made it today, cold and a clasic fall day outside. Family loves it. We have been dipping into the pot all afternoon for mugs full of this soup.I have a large family so I tripled the recipe and it works great,I used chicken stock as well as added a bit of vegatable juice to help the store bought tomatoes a bit. Thank you...will make this very often.
