I think this is one of the best recipes I have ever tried. I gave it 4 stars because of the sugar. I only put 1/3 of a cup of sugar and it was still a little sweet for me. I made it an hour before supper and it was still wonderful but the next day it was fantastic and the sweetness had been absorbed by the macaroni.. I used red bell peppers instead of green because that was what I had. If you can let it sit overnight for the next day. It was still very creamy and not dry like most of my pasta salads are the next day.

I used a 1 lb box of elbow macaroni, 1/2 c Miracle Whip light, 1 tsp vinegar, 1 tsp sugar, 1 tsp mustard, omitted salt, pepper, salt free Emeril's Essence, 2 green onions, 2stalks celery, 1 red pepper, 2 carrots, 2 hard boiled eggs, all finely diced, added FF Ranch and FF sour cream until it was wet enough. Very good, just like Grandma used to make.

This was awesome! I own a little cafe and we served this salad all week with sandwiches and they all loved it and asked me to add it to the menu!

I'm happy with deli-style macaroni salad, so this is just the recipe I was looking for! Simple, fast, and delicious! Only change I made was using a bit less sugar than it called for. Still amazing!!!

By far this is the best receipe that I have seen anywhere. Just made it the first time tonight but it will not be the last. I am diabetic so I used Splenda instead of sugar couldn't tell it wasn't sugar. Thank for sharing this one

I've been craving Macaroni Salad so I made this recipe today. LOVE it!!!! I only had Apple Cider Vinegar on hand and just used 1/4 cup of sugar. It is SO GOOD. Thanks for sharing.
