Mouth watering tender corned beef with corned beef flavored potatoes, cabbage, and carrots. This is my great grandmothers recipe from Ireland. This was served with both Irish soda bread and corn bread at our house.

A traditional Newfoundland meal, comparable to Corned beef and cabbage. Newfoundland is Canada's easternmost province, and is an island in the Atlantic. Make sure that the split peas are securely tied into a cloth bag (pudding bag), a dish towel or cheesecloth, if they escape you will not have a dinner, you will have pea soup!!

Here's a cozy dish to comfort on a dark and stormy night. A creamy, fragrant stew of chicken, celery, onions, carrots, peas and potatoes plays host to biscuit dough, dropped by the spoonful into the boiling hot liquid. Simmer until the dumplings are done. 

Midwestern Pork Chop Dinner

Tender carrots, potatoes, and kohlrabi, seasoned with marjoram and bathed in milk, bake into a creamy vegetable bed for pork chops nestled over the top. In place of kohlrabi, which tastes like broccoli with a peppery bite, you could substitute onions.

Every Irish household has their own version of this famous dish-so here's mine. I like to add chunky pieces of parsnip for a little sweetness, and fresh rosemary gives it a distinct flavour and aroma. If you use a tougher cut of meat, you can leave it to simmer longer before adding the potatoes. Fantastic on a cold, blustery day-served with a pint of the black stuff, of course!

When in a hurry, I substitute canned potatoes and green beans for the fresh. I like the fact that I can pop this meat loaf into the oven in the late afternoon and forget about it until dinnertime.

I'VE PREPARED this dish for a tableful of people, but it's easy to fix for just two. All the ingredients can be adjusted to satisfy the appetites to be served. If you like different vegetables, simple cook them right along with the other ingredients. My side dishes for this meal are bread and a toasted salad. --Shirley Lazor Colorado Springs, Colorado
