3/4 cup yellow cornmeal
1/4 cup all-purpose flour
2 teaspoons salt
1 teaspoon ground red pepper
1/4 teaspoon garlic powder
6 (6 ounce) fillets farm-raised catfish
1/4 teaspoon salt
Vegetable oil
This is very good and crunchy! I did add a dash or two of Emerils Essence. Make sure your catfish is dry before you coat it, and have the pan sizzling to insure a quick sear, and crusty outside.
Classic maybe, however not much flavor. Seasonings go a long way including some cajun spices.

Considering I'm just getting started in the kitchen. I'm amazed at the results. My husband and I barely made it to the table with the food after sampling it as we cooked!! We love catfish and this was some of the best we've EVER had (and we've had ALOT!!!)

Very tasty and easy for a basic fried catfish recipe - as good, if not better, than any we've had at a restaurant! Will definitely make this again when I don't feel like spending lots of time in the kitchen...
I have never made fried fish and I was having 12 people over for dinner. I found this recipe and was praying it would be good. EVERYONE loved it !!!!
