Following others' suggestions to up the health factor, I used applesauce instead of oil and low-fat buttermilk. I also used whole-wheat pastry flour instead of the all-purpose, so I upped the baking soda & baking powder by 1/2. I used craisins instead of raisins because that's all I had. This recipe is simple and delicious. Sweet, filling, easy, and a great fast breakfast. Thanks for the great recipe! Next time I think I'll try the banana and coconut variation!

Very tasty and versatile recipe. I halved the oil and sugar, used ww flour for AP and soaked the raisins in hot water to make them juicy. My sons loved them!

I too substituted the applesauce for the oil. I added 1/2 cup whole wheat flour and cut the white flour to 1/2 cup. Also added 1/2 cup wheat germ and or flaxseed. These muffins are GREAT!

My first attempt at bran muffins-and it was a success! I used this as a base recipe and made just a few small changes. I substituted unsweetened applesauce for the oil, and instead of buttermilk I used 1T lemon juice and added skim milk to make 1 cup. I also added 1/2 cup flaked coconut. No raisins. DELICIOUS and moist! Even my kids loved them!

I replaced the oil with a single-serving cup of strawberry applesauce (1/3 cup) and the milk with 1 tbsp lemon juice and enough milk to make one cup. They're delicious! SO moist, they rose really well, and there's just a hint of fruit flavour from the applesauce. Really subtle but so good. I'll be making these a LOT.

This is a great bran muffin recipe. I cut the oil to 1/4c and the sugar to 1/2c. I separated the mix in 2 then used craisins, (since we don't like raisins). Then blueberries in the other half. We like them both ways. I got 4 Large muffins of each type. I will double the batch next time for sure! This is a great way to add fiber to your diet, even for those who don't love bran.

Delicious! I didn't have wheat bran so I used oat bran. I replaced the all-purpose flour with whole wheat flour and used craisins instead of raisins. These were fantastic!

This is the most flavorful bran muffin I've found so far. I made this recipe exactly the first time, then I made it fat free, with a little oat bran added, the second time. It was great both ways.

These are delicious! I followed the recipe almost exactly. I used powdered buttermilk instead of the regular kind. I added cinnamon, flax seeds, and blueberries(omitting the raisins). Simply delicious. Oh yeah, and I had run out of oil, so I used apple sauce. Wow, maybe I changed a lot more than I thought.

These were absolutely delicious!I didn't have buttermilk, so substituted sour milk(cup milk mixed with 1tbsp of lemon juice or vinegar)My kids aged, 13, 8 and 5 all loved these muffins. This will be a go to recipe from now on.

Very good! I substituted applesauce for the oil and whole wheat flour for half of the white flour, doubled the recipe and made half with chocolate chips, half with raisins. They turned out great! Will use again!

I pretty much followed the recipe, except I used a little less sugar and no rasins. For my 2nd batch I added a little, fresh crushed pineapple, a little, chopped pecans and a tiny bit of coconut. They were the best my husband and I have ever had.
