  1. Warm up waffle iron.
  2. In a large bowl, sift together flour, sugar, baking powder, baking soda, nutmeg, cinnamon, and salt.
  3. In a small bowl, whisk together eggs, milk, buttermilk, and canola oil. Pour over flour mixture and stir together. Do not overmix.
  4. For each waffle, lightly spray or brush waffle iron with canola oil. Pour in about 1/2 cup of batter and spread to edges with a knife. Cook for 30 seconds with lid open. Close lid and cook for about 4 minutes or until golden brown. Serve with your favorite topping like maple syrup, toasted nuts, syrup...

Excellent!!! Easy and delicious! Better than the yeast recipes that take too long!!! Thanks! Had no problem with them sticking...I just used a non-stick spray on the iron. Cooking for 30 seconds with lid open was a great hint!

These did turn out tender. We topped them with a vanilla butter sauce.

These were quite good! :) My kids and hubby ate them up! They stuck some to my waffle iron. I haven't ever had to grease it before, but I had to with these. I followed the recipe with leaving the iron open for 30 seconds after putting the dough in and they crisped up fairly nicely. I had raspberries and strawberries to go on top along with some Cool Whip. YUM!
