Cinnamon Toast "Blinis"

  1. Preheat oven to 400 degrees F. Mix cream cheese, 1/4 cup of the sugar, vanilla and egg yolk with wire whisk until well blended. In separate bowl, mix remaining 1/4 cup sugar and cinnamon; set aside.
  2. Flatten each bread slice with rolling pin. Spread 1 side of each slice evenly with 1 rounded Tbsp. cream cheese mixture. Starting at short end, tightly roll up. Brush each roll with butter; roll in reserved cinnamon-sugar. Slice each roll into 3 pieces.
  3. Place each piece, seam side down, on baking sheet. Bake 12 to 15 min. or until edges are lightly browned. Serve immediately.

These are, weirdly, pretty tasty. I made 1/2 the recipe with some soft white Nature's Own brand bread. I used whipped cream cheese and butter with canola oil, which helps cut back the sat. fat some. I always have some cinnamon sugar mixed up, in my cubard, so I just used that. To flatten the bread, I just used my fingers and it worked fine. Mine baked in the 12 minutes. They make a nice little breakfast treat. They are not too sweet. It is like eating cinnamon toast with a small lightly sweetened bite of cheesecake. The only thing is, they really are only best straight out of the oven warm.
