INGREDIENTS
1/3 cup butter or margarine, softened
1/2 cup sugar
1 egg
1/2 cup milk
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
TOPPING:
1/4 cup butter or margarine
1/2 cup sugar
1 teaspoon ground cinnamon

DIRECTIONS
In a mixing bowl, cream butter and sugar; beat in egg and milk. Combine flour, baking powder, salt and nutmeg; stir into creamed mixture (batter will be stiff). Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 15-20 minutes or until muffins test done. Meanwhile, melt butter and combine sugar and cinnamon. Remove muffins from oven; immediately dip tops in butter, then in cinnamon-sugar.

My family really enjoyed these. They were like a light, sweet biscuit but they weren't too sweet for breakfast. I give them a 5 for taste and how easy they were to throw together. We'll definitely have these again!

When I first read this recipe it reminded me of a breakfast treat my mother used to make for me when I was a child. I would do the multiply the recipe about 1.5 times. My cupcakes did not turn out very big. I would add more than 2/3 cup to the muffin tin. Other than that, it was delicious and a hit with my friends.
