Ingredients

  • 1 tablespoon butter
  • 3 medium potatoes, peeled and cubed
  • 4 yellow squash, cubed
  • 4 fresh tomatoes, peeled and chopped
  • 1 medium onion, chopped
  • Salt and pepper to taste

Directions

  1. Place butter in a skillet over medium heat. Stir in potatoes, squash, tomatoes, and onion. Season with salt and pepper. Cook, stirring occasionally, until tender, about 30 minutes.
