Many reviews talk about burning the cilantro so they add last. I like the flavors to combine, so I skipped sauteing the cilantro and garlic. Instead I cooked the garlic, cilantro, and potatoes all at the same time. Then reduced the cooking temperature and increased cooking time. This avoided any burning of the spices.

I was looking for a recipe that was easy to get rid of some potatoes I had and came upon this one! This was easy, and came out real good! My son that is 2yrs old loved it! Thanks for the recipe! I did no changes! :)

I didn't think this recipe was that great, and I love cilantro and garlic (which we added at the end as recommended by other reviewers). We had to add a lot of salt to bring out the flavor. I probably won't make these again, unless we need to use up a bunch of cilantro again.

I thought these were fabulous! I took the suggestions of others and did the potatoes first, then tossed in the cilantro and garlic with about 10 minutes to spare. I also added prosciutto towards the end to make it into a main dish. The whole family loved them.

I kinda hate giving this recipe 3 stars because it was great with modifications, but not-so-great as written. You have to put the garlic and cilantro in near the end - once the potatoes are browned - or you will end up with burnt garlic and cilantro, yuck. There's also more oil than is appetizing - I cut it in half and had plenty. I added a little sliced jalepeno at the end and served these with Smokey Chipotle Meatloaf from this site. We really liked them together. Thanks for the recipe!
