1 bunch fresh cilantro, chopped
1 garlic clove, minced
1/4 cup olive oil
3 pounds potatoes, peeled and cubed
1/2 teaspoon salt

DIRECTIONS
In a large skillet, cook cilantro and garlic in oil over medium heat for 1 minute. Add the potatoes; cook and stir for 20-25 minutes or until tender and lightly browned. Drain. Sprinkle with salt.

These were great. I also added green onion and cumin. The key is to add the cilantro and green onions when the poatoes are almost done so they do not cook down and taste burnt.

I really liked these, but I had to spice them up considerably. I finished them off by putting them in the oven with some cheese. I would definietly make these again.

Very very good! Easy to prepare, the cilantro didn't even taste "soapy" to me cooked this way. My hubby loves cilantro, so naturally these were a hit with him as well. I will use a little more garlic next time though.

Pretty good. I ended up using extra cilantro as it cooked down and the potatoes still could have used something. I sprinkled too much salt at the end too - my fault - but go light on sprinkling the salt.

Great way to prepare potatoes. We added a more cilantro and garlic than called for, but we really like our spice and flavor. I highly recommend this recipe!

I thought these were good, I added half butter and half olive oil and roasted them in the oven instead of in a skillet. Mine came out crispy and tasty, love garlic and cilantro both so it's no surprise I liked this.

I added a can of creamed corn and a little cumin just before the potatoes had finished cooking. It gave a unique twist to the dish and was very tasty.

These were decent, I used extra garlic and cilantro. Make sure you add the cilantro near then end when the potatoes are almost done, as another review suggested. I didn't and my cilantro was pretty burnt, but still edible. Thanks for the recipe, Weda.
